Bacon — Many would argue that this is the best part of the pig.

Kale — Delicious and popular with plenty of uses. Ignore the haters.

This could be soup, but we’ve got other plans.

The combination of beans, kale, and other grain will get you started for protein, veggies, and carbs. Cilantro and bacon are added for flavor and character.

You might want to combine the ingredients into a single meal — on a sheet pan or in a crock pot, for example — or separate them into multiple dishes. Whatever you decide, we suggest you pan fry at least one of the dishes.

  • Rachel Ray comes to the rescue with these Smoky Bacon, Black Beans, and Greens Quesadillas with Pico de Gallo. Note that for the “other grains” we’re going with whole wheat tortillas, and there’s nothing wrong with that. Heck, it shouldn’t bother anyone if you used plain old white flour tortillas. It’s your kitchen, so do what you want.
