Broil: seitan, other grain, parsley, mushroom, and endive

The combination of seitan, endive, and ancient grains such as freekeh, buckwheat, or amaranth will get you started for protein, veggies, and carbs. Have fun with it by adding parsley and mushroom.
You can use these ingredients in a single dish or combine them however you like to create one or more side dishes and a main course. Try to broil at least one of the dishes, though.
Use any additional ingredients that you think will work as well. There are really no rules here. This is all just a suggested starting point to get you going. If you’re inspired to do something completely different, then good for you! The point is just to have fun and to discover some new flavors and food combinations.
