What will you make with seitan, grains, mushrooms, and carrots?
Try seitan, carrot, and ancient grains such as freekeh, buckwheat, or amaranth for your protein, vegetables, and carbs. Have fun with it by adding oregano and mushroom.
You can make a single dish using all the ingredients, or you can split it up into additional sides. But try to roast/bake at least one of them.
